Description

This is so light and fluffy and just perfect! I had to keep hubby out of it! He just wouldn’t stop eating it! I can see this recipe being made a lot in the future! It was also my first time making my own whipped cream out of whipping cream! Super easy!

Ingredients

  • 1 cup Water
  • ½ cups Sugar
  • 8 ounces, weight Crushed Pineapple, Drained
  • 3 ounces, weight Dry Cherry Jello Mix
  • 16 ounces, fluid Whipping Cream
  • ½ cups Pecan Pieces
  • 1 cup Mini Marshmallows, And A Few For Garnish
  • 2 whole Cherries With Stems, For Garnish

Preparation

In a saucepan mix the water, sugar and pineapple over low heat until the sugar is dissolved, 3-4 minutes. Add the dry Jello mix. Stir then heat for 3 more minutes, stirring constantly.

In a large bowl using a mixer with whisk attachment, beat whipping cream until thickened or stiff peaks form. Do not over beat. I didn’t time it but I’m guessing it was 4-5 minutes.

Place the Jello/pineapple mixture in the refrigerator for 30 minutes or just until the mixture starts to thicken somewhat.

Then remove the Jello mixture from the refrigerator. Add the pecans and mix them in. Then gently fold in the whipped cream. Add the mini marshmallows last and mix lightly to combine.

Cover and refrigerate at least 2 hours before serving. Serve topped with cherries.
