Description

This is a great pie to take to a party. Make the guests guess what the main ingredient is but don’t tell them before they eat it! They may turn their nose up!

Ingredients

  • 1 cup Cooked Pinto Beans
  • 4 whole Eggs
  • 3 cups Sugar
  • 1 cup Chopped Pecans
  • 1 can Coconut
  • 2 sticks Melted Butter
  • 1 Tablespoon Vanilla
  • 3 whole Uncooked Pie Shells

Preparation

Rinse your beans and drain. (You can use canned ones.)

Mash beans well.

Beat eggs and add beans and all other ingredients and mix well.

Pour into unbaked pie shells. Bake at 350 degrees for 1 to 1 1/2 hours. (Cook until set)

This pie freezes well.
