This is a delicious ice cream recipe that is much lower in fat and sugar than many other traditional recipes. This recipe only needs 4 ingredients!
You will first want to puree your pineapple in a food processor. You can use either canned or fresh pineapple, both work well. Combine the kefir, the pureed pineapple, coconut milk, and sugar in a bowl and stir well. Add into your ice cream maker (follow the specific manufacturers instructions). My ice cream maker takes 20 minutes as long as the ice cream maker canister is well frozen; I keep it in the freezer always so it is always ready when I have a whim to make ice cream!
Makes about 1.5 quarts.
