Cookies, cream and peppermint all wrapped up in vanilla ice cream. What’s not to love?
For the ice cream:
In a large bowl mix the softened ice cream and the crushed cookies. Fold in the whipped cream (recipe below) and freeze until firm.
To make the whipped cream:
In a large bowl using a hand mixer, whip the heavy cream until stiff peaks are about to form. Add sugar and vanilla and beat until stiff peaks are formed. Do not over beat or it will become butter like. Note: 8 ounces of Cool Whip can be substituted for the whipped cream.
