These are like pecan pie, except in bar form. I swear, I call these crack bars in my house, because I can’t stop eating them. Thanks to my mother-in-law for the recipe, and the resulting inches on my hips (totally worth it).
1. Heat oven to 350°.
2. Grease jelly roll pan (15½ X 10½ X 1 inch).
3. For the crust: Beat flour, butter, sugar, and salt in large bowl with electric mixer on low speed until crumbly (mixture will be dry). Press firmly in pan (works really well if pan is lined with parchment paper and then the parchment is greased/buttered). Bake about 20 minutes or until light golden brown.
4.For the Filling: Mix all ingredients listed under filling except pecans in large bowl until well blended. Stir in Pecans.
5. Pour filling over baked crust layer; spread evenly. Bake about 25 minutes or until filling is set. Cool completely. Cut into desired servings.
