Description

These are my pecan hazelnut fudge energy bites rolled in several different toppings. They are packed with protein, and absolutely guilt-free! Perfect for an at-work snack, workout refreshment, or simply for some bite-sized comfort!

Ingredients

  • ½ cups Pecan Halves
  • ¼ cups Hazelnut Pieces
  • ½ cups Soft Dates
  • ¼ cups Cocoa Or Cacao Powder
  • ¼ cups Dessicated Coconut Flakes
  • 3 Tablespoons Pure Maple Syrup
  • 1 Tablespoon Milled Flax
  • 1 teaspoon Pure Vanilla Extract
  • Your Desired Toppings Or Coating

Preparation

Place pecans and hazelnut pieces in your food processor. Grind until they are medium/fine pieces. Add remaining ingredients and process until a very thick dough-like consistency is formed.

When complete, remove S-blade carefully, and using a spoon, spoon out some of the mixture into your hands and roll into uniform balls one by one. Place each completed hazelnut fudge bite onto a piece of parchment paper.

After all bites are rolled into ball shapes, sprinkle coconut, carob/cacao powder, sprinkles, or whatever topping you desire onto the parchment paper and gently roll each fudge bite into mixture until they are all coated.

Store in refrigerator until ready to serve.
