These peanut butter blondies are densely packed with brown sugar, butter, and chocolate frosting. A quick, delicious treat for any night of the week.
To make brownies: Preheat oven to 350 degrees F. In a bowl, cream together peanut butter and softened butter. Gradually blend in sugars, egg, egg white, and vanilla and beat until fluffy, about 2-3 minutes. Add flours, baking powder, and salt and combine. Fold in peanut butter chips. Pour into a greased 9×9 baking dish. Bake for 25-35 minutes, or until just barely done. Cool before frosting.
To frost: Melt dark chocolate chips in the microwave in 20-second intervals. Combine with butter and powdered sugar and stir together until a thick glaze forms. Pour onto cooled blondies and spread frosting evenly. Refrigerate for 30 minutes or so—that is, if you can wait.
