Light and delicious fresh Peach Pie. Yum!
CRUST: Mix together the flour, powdered sugar, and melted butter. Press into a pie plate, up the sides, but not over the edge. Bake 10 – 15 minutes at 350 degrees. Cool.
FILLING: In a saucepan, combine sugar, peach jello, cornstarch and water. Boil 3 minutes or until mixture “clears.” Cool.
PEACHES: Peel peaches. Halve and remove the pit. Slice and put in the filling mixture. Toss to coat. Pour mixture onto cooled crust. Chill until set.
