The lemon zest in the dough makes for a refreshing change to the cobbler.
Preheat oven to 375 degrees (F).
Peel peaches if fresh. Thaw if frozen. Mix peaches, cloves, ginger, cinnamon, corn starch, 1 cup sugar and 3/4 cup water. Heat on the stove just until warm, and the sugar dissolves. Spread the mixture into a cobbler pan.
To make the dough, cream butter and remaining 1/2 cup sugar until smooth. Add in beaten egg, vanilla and lemon zest. Mix well. Then add flour, salt, and baking powder. Mix well. Drop by spoonfuls on top of the fruit and bake for 40 minutes or golden brown.
