Oatmeal cookie bars topped with melted chocolate and peanut butter.
Preheat oven to 350 degrees. Grease a 13×9 cookie sheet with cooking spray. (If you have one where the pan sits a little bit deeper, use it.)
1. Cream the margarine.
2. Add both sugars and mix together.
3. Blend in eggs, peanut butter, salt and vanilla.
4. Stir in the flour and oatmeal.
Spread into your pan and bake for 20 minutes. While baking, prepare the peanut butter topping by combining the powdered sugar, peanut butter, and milk. It should be thick, but still easily pourable. You may need to add up to 2 more tablespoons of milk to get a better consistency. (I never seem to have evaporated milk when I make this and have always used regular milk that I have in the fridge. It works just fine.)
As soon as you pull the pan from the oven, cover with your chocolate chips (the more chips, the more covered and chocolatey). Wait a few minutes and then gently smooth the melted chips with a spatula.
Pour peanut butter topping over the top and spread with a spatula. Preferably, the chocolate should be somewhat set and a little cooler, but if you’re impatient like me, just go ahead and throw it on.
Again, it should set and cool before cutting into bars, but by this point I really want a PB bar so I usually dig in. I’ll let you decide how you go about this dilemma.
