If you have ever tried a Payday bar, and if you love peanuts, you’ll love this treat. I have had many people ask me to make this for them. I have even made this as a gift. Also, it seems to be even better the next day.
A great dish for a potluck or large gathering.
Butter a 12×18 rimmed cookie sheet or shallow pan. Make sure that you butter the sides and bottom very well. Parchment paper is not recommended.
Combine Rice Chex and peanuts in a very large bowl.
Combine sugar and corn syrup in heavy duty saucepan. Heat to a full boil, stirring constantly. Be careful not to burn. Once boiling, remove pan from heat, stir and blend in vanilla and peanut butter.
Pour blended syrup mixture into Rice Chex mixture and mix very well. This will be quite hard to mix, so use a heavy duty spoon (I have broken a couple during this process).
Pour mixture into prepared cookie sheet or pan. Press it so that the top is smooth and it covers the entire surface of the pan.
Cool and cut into squares.
