An oatmeal variation of apple crisp, baked with fresh apples.
Peel and core apples (I am IN LOVE with our new apple corer). Preheat oven to 375º. Cut apple slices in half.
In a mixing bowl, combine flour, brown sugar, and oatmeal. Work the butter in with a dough blender or fork until you have a firm, yummy crumb topping. Place apples in a baking dish (any will do, just be sure it is deep enough to contain a good layer of apples and crumb). Sprinkle cinnamon on top and pour crumb over the apples. Bake for 30-35 minutes or until browned and crispy on top. Apples should be sizzling a little. Enjoy!
