Description

Rich, decadent, wonderful and, best of all, no-bake chocolaty bars for summer get-togethers or anytime.

Ingredients

  • FOR THE BASE:
  • ½ cups Butter
  • ¼ cups Confectioners Sugar
  • 5 Tablespoons Cocoa Powder
  • 1 teaspoon Vanilla Extract
  • 1  Egg
  • 2 cups Graham Cracker Crumbs
  • 1 cup Sweetened Coconut
  • ½ cups Chopped Walnuts
  • FOR THE FILLING:
  • ¼ cups Butter
  • 2 Tablespoons Birds Custard Powder (You Can Use Vanilla Pudding Mix Instead)
  • 3 Tablespoons Milk
  • 2 cups Confectioners Sugar
  • FOR THE TOPPING:
  • 4 ounces, weight Semi-Sweet Baking Chocolate (4 Squares)
  • 1 Tablespoon Butter

Preparation

For the base, set a pan over some boiling water. Stir the butter, confectioner’s sugar, cocoa powder, vanilla and egg together until they resemble custard. Then mix together with the graham cracker crumbs, coconut and walnuts.

Press the mixture evenly into a 9 x 9 inch pan. Place in the fridge while you mix up the filling.

For the filling, cream together the butter, vanilla custard powder, milk and confectioner’s sugar until smooth. Spread this over the base and place in the fridge to set up while you prepare the topping.

For the topping, melt the chocolate and butter in the top of a double boiler. Spread this over the cooled filling and place in the fridge for a few minutes to set up a little.

Score the chocolate to make it easy to cut into squares when you serve it. This is very rich and yummy, so err on the side of smaller squares the first time you make it. You can also take seconds if you like. This also freezes well, so you can remove it from immediate temptation if you like.
