Sweet crunchy crust combined with the bitter rhubarb. Sooo good!
Mix the first five ingredients until crumbly. Press half of the mixture into a 9×13 pan. Cover with the diced rhubarb. Combine the white sugar, water, cornstarch and vanilla until thickened and clear. Pour over the rhubarb. Top with the remaining crumbs and bake at 350 degrees for 1 hour.
