A simple pecan pie that my mom taught me to make. I made it for a true Southerner, and he didn’t spit it out.
Beat eggs and salt until light. Gradually add sugar; fold in butter, syrup, and vanilla.
Pour mixture into an unbaked 9″ pastry shell. Cover the top with pecans. Bake in a preheated 450-degree oven for 15 minutes. Reduce oven temperature to 275 degrees. Bake for 40 minutes.
To keep it from burning, place a ring of aluminum foil around the edge of the pie crust.
