Nothing smells as wonderful while baking as an apple pie. The entire house smells of cinnamon and apples.
Preheat oven to 375 F.
Put the frozen and thawed pie crust into a pie dish. Put the pie dish onto a rimmed sheet pan and bake for 6 minutes (remember to use a fork to prick the bottom of the crust before baking). Remove from oven and set sheet pan with the pie dish on it aside.
Core and thinly slice all of the apples. Start with 10 of the Granny Smith apples. In a large skillet or sauté pan over medium heat add softened butter. Once melted add all of the sliced apples as well as the cinnamon, nutmeg and cloves. Stir well and be prepared—this will smell wonderful while it’s cooking! Cook for 8 minutes. Add apple mixture into the pie crust and mound the center of the filling (it will be piled high on top of the pie crust).
In a mixing bowl add maple flavored instant oats, brown sugar and honey and stir well (it will be a bit sticky). Add this to the top of the apples/mixture and spread it out with an offset spatula.
Place the pie back into the oven and bake for an additional 40 minutes (keep an eye out for the outer rim of the crust—if it is starting to darken and brown too quickly add thin pieces of foil around the outer edge of the crust to slow browning).
Remove from oven, let pie cool and add some vanilla bean ice cream, or frozen yogurt to a warm slice!
