My good friend Jo Ann, or as I pronounce it, “Miz Jo Ayun,” absolutely hates eggs. She REALLY, REALLY hates eggs. She does everything in her power to avoid them. She invented this incredible egg-less key lime pie recipe to thumb her nose at all of those recipes that contain eggs. No matter what your stance is in the egg/no egg debate, you should try this pie today!
Cream the cream cheese and sweetened condensed milk in a large bowl until smooth. Add key lime juice to the mixture and mix again. Fold in Cool Whip until well blended. Pour into two pre-made graham cracker crusts. Refrigerate pies at least six hours. Perfect for hot summer days when it’s 112 degrees in the shade and you and your friends/family are miserable, irritable, and beginning to get on each other’s nerves. No one can stay angry after they’ve experienced this fabulous dessert!
