Description

Warm, sweet fruit topped with a crumbly oat topping. I made mine with blueberries, nectarines and rhubarb, but use whatever combination of fruit you have on hand.

Ingredients

  • 4 cups Chunks Or Slices Of Fruit, Peeled If Desired (Peaches, Nectarines, Berries And Apples Work Well)
  • ¼ cups Granulated White Sugar
  • 1 Tablespoon Cornstarch
  • ¾ cups All-purpose Flour
  • ¾ cups Light Brown Sugar, Lightly Packed
  • ¾ cups Dry Oatmeal, Old-Fashioned Or Quick-Cooking
  • ¾ teaspoons Ground Cinnamon
  • ⅛ teaspoons Ground Nutmeg
  • ½ teaspoons Vanilla Extract
  • ½ cups Butter

Preparation

Preheat oven to 375ºF.

Mix together fruits, granulated sugar and cornstarch in a medium bowl. Spread fruit mixture in greased 8″ x 8″ baking dish.

In a mixing bowl, combine flour, brown sugar, oatmeal, cinnamon and nutmeg. Mix in vanilla and butter, mixing with a fork or fingertips until mixture is combined and crumbly. Spread topping evenly, without pressing down, over top of fruit.

Bake for 40 minutes or until bubbly and top is browned. Serve with whipped cream, ice cream or frozen yogurt.
