This is a favorite and a holiday staple in my family. Custard filling with pineapple pecan whipped cream topping!
Mix together butter and 2 cups of powdered sugar. Add eggs, salt, and vanilla. Mix until light and fluffy. Spoon mixture evenly into baked pie shells. Chill.
Once the pie is chilled… Whip cream until stiff. Blend in the remaining 1 cup of powdered sugar. Stir in pineapple and pecans. Spoon on top of pie filling and chill.
