Description

Very easy pie to make using your microwave. Not quite a custard; it’s very light-tasting. I was given this recipe by friends from South Africa.

Ingredients

  • 2-¼ cups Milk, Vitamin D Or Whole Milk (Low-Fat Doesn't Work)
  • ½ cups Sugar
  • 2 whole Eggs
  • 1-¼ Tablespoon Flour
  • 1-¼ Tablespoon Cornstarch
  • Graham Cracker Pie Crust

Preparation

Microwave milk 7 minutes on high in a glass bowl.
Meanwhile, beat sugar and eggs together until fluffy. Add flour and cornstarch. Beat until smooth.

Add egg mixture to milk and beat until smooth.
Microwave one minute; beat. Keep microwaving one minute at a time, beating smooth after each minute. It may take 5 to 6 times before it gets semi-thick.

Pour into graham cracker pie shell, jiggle to even out filling and refrigerate until it sets up.

Thank you, piescientista, for trying it!!

I’ve tried it with an Oreo crust before. I liked it, but my husband didn’t. go figure.

I’ve also tried making the filling chocolate by adding some cocoa. It didn’t set up right – had to do the extra minute in the microwave a couple more times than normal and finally gave up. But it still tasted good!

This pie really surprised me. Coming out of the microwave the thickened milk mixture tasted like, well…warm milk. I was very uncertain about how this whole thing would turn out. I tried it this morning and it is REALLY good.

Based on the description that this would be a light and not too sweet pie (very accurate) I decided to put it in an oreo crust and give it a light chocolate chip sprinkle on top. This will be a great pie for warm summer months when heavy desserts aren’t very appealing, and neither is turning on the oven.
