A light and naturally sweet frosting for banana bread, carrot muffins and much more. Enjoy with maple syrup from your local sugar bush or your favourite brand at the supermarket. Wholesome sweetness in every nibble.
I grew up in a tropical island where no one knows what a maple leaf is and a sugar bush is simply crazy talk. Since moving to Canada, I have always felt a strong desire to experience “Canadian” things. I won’t get into my miserable attempts at portaging (it sounded so sophisticated and elegant!), or snowshoeing, or camping.
Since having children, this desire to experience truly Canadian things lives on even stronger. Every spring I take my children to the sugar bush. For those southerners out there, the sugar bush is where they harvest maple syrup—the most Canadian experience out there. This place is filled with maple trees, muddy slopes, horse rides and children licking their lips as they drown bouncy pancakes with syrup.
So this recipe is an attempt to use the maple syrup we buy at the end of our outing. I love real maple syrup because it is wholesome sweetness. It has more calcium than milk (per tablespoon) and has a million and one uses. The duct tape of food.
Mix softened cream cheese until smooth. Add softened butter and mix until combined and smooth. Add maple syrup slowly and mix until combined and smooth. Add Icing sugar. You might need to add more to get the consistency you want. Spread onto every nook and cranny of your banana bread or muffin.
Enjoy it.

It is also called confectioners sugar. I think it is the same thing as powdered sugar.

This sounds wonderful. It’s going in my recipe box. I just ordered a couple quarts of organic maple syrup. Is icing sugar the same as powdered sugar??
