Utterly heavenly. It’s a treat especially for a mango lover like me.
Make sure you have extra portions, because I can ensure you no one can stop at just one portion.
Note: For anyone who has sensitivities, this recipe contains raw eggs.
1. If using fresh mangoes, puree the mango cubes in a blender along with sugar and lime juice. If using canned pulp, mix together mango pulp, sugar and lime juice well. Keep aside.
2. In one bowl, beat egg whites until stiff peaks form.
3. In another bowl, beat cream till soft peaks form and cream is fluffy. (Before whipping, it is best if you put the bowl and cream in the freezer for 5 minutes so that everything is nicely chilled before starting to work with it.)
4. Heat 2 to 3 tablespoons of water, squeeze gelatin leaves and dissolve them in hot water and add it to the mango mixture.
5. Add cream to the mango mixture and mix gently. Then add egg whites to this and fold till well combined.
6. Pour this into a dish and and refrigerate for at least 4 to 5 hours. Alternatively, you can even spoon the mix into individual cups or glasses and refrigerate.
7. Serve chilled and enjoy!

I’ve added some headers into the ingredients list (you can do this in the future – just press delete in the Quantity field of your ingredient entry form – to make sure it’s blank – then tab through the measurements field and go to the ingredient description field and type the header in ALL CAPS. We prefer the format FOR THE **:). Would you add the additional required ingredients for the mango mixture (LIME juice and sugar) into the ingredients list for us? Or is the powdered sugar and LEMON juice that you have at the bottom of the ingredients list what you were referring to? If so, please ‘drag’ these ingredients lines up into the mango section – and would you also tweak the instructions to specify if it’s lemon or lime juice that you use?
– Also, so for step 4 do you just put the gelatin leaves right into the warmed water? Should the water be boiling, or just heated for 30 seconds or what? Would you clarify this step as well?
