It’s officially summer for me and there’s only one way to celebrate: mango mojito popsicles!
Mix together the lime juice, club soda, and mango nectar in a large pitcher and let it sit while you work on the next step. Peel the limes and lemons and cut them into small wedges. Add to the pitcher along with the mint, sugar, and rum. Mash all the ingredients together with a large wooden spoon. Pour into popsicle molds and freeze for at least 12 hours.
When ready to enjoy, let the pops sit out for 5 minutes or run them under warm water to release them from the molds/
Although I didn’t think of this until after I did my shopping, I think dicing up a few mangoes and adding them to the mix would have been a great addition!

I’ve seen mango nectar in the juice aisle. The one’s I’ve seen come in a can. But I’m not sure where they would be in a “normal” supermarket. My husband is military so we shop the commissary and it seems like things are never in the same spot when I shop a supermarket or WalMart. It drives me nuts!
Anyway, I can’t wait to try these. I don’t think I have any regular rum in the house right now… but I might give these a shot with some coconut rum (which I seem to have an excess of at the moment). I’ll let you know how they turn out! (It may be a while before I review though… we’re moving to Texas in a few weeks.)
