These brownies are cake-like, moist and delicious! Although the original recipe (from Lynn) doesn’t call for icing OR nuts, I really love cream cheese frosting and will make excuses to use it any time I can! And this is one of those times. The addition of nuts is totally up to you. My family prefers them. Thanks, Lynn, for letting me share this recipe!
Cream together the butter, sugar and eggs, one at a time, beating well after each addition. Add vanilla and combine until smooth. Add the flour, oats, baking powder, and cocoa. Mix well on low to medium speed with your electric mixer until batter is smooth. Add nuts if you’re going to use them.
Pour into an 8×10 greased and floured (I use Baker’s Joy) pan and bake at 350 degrees for 30 minutes. Do not over bake . It’s a good idea to keep an eye on them during the last 5 minutes of baking, depending on your oven.
Let them cool and then prepare the frosting:
Mix softened butter, cream cheese and vanilla together until creamy.
Then add sifted confectioner’s sugar, mixing as you add until it reaches the consistency you like. (It might take a tad more or less, depending on your preference in consistency.) You might want to add a drop or two of cream, but not too much or your icing will slide right off those yummy brownies! Smear the schmear of cream cheese goodness over the top of the brownies and cut them into nice little squares. And watch them disappear!

I made this and took it out right at 30 minutes and let it cool and the middle fell in and then we cut them after completely cool and it is like a big soup bowl of chocolate. The middle didn’t even cook. The only cooked part was the crust around the edges. It was such a bummer. I am pretty sure I followed the directions correctly, so I don’t know how it could have been so wrong. Hmm, I will give it a try again and make sure it is set in the middle before I pull the brownies out. I am sure it will take at least 45 minutes for it to cook. anyway, we are going to take it and keep it refrigerated and then use it as an ice cream topping. The chocolate oatmeal soup was good!
