My great-grandmother made these for my dad when he was in Vietnam. His buddies memorized her address so they would know when the lemon bars showed up and then he HAD to share. Now I send them to my husband. They’re easy and full of yum.
Preheat oven to 350ºF.
Combine 2 cups flour, powdered sugar, and butter; press into a greased 9×13 baking pan. Bake for 15 minutes, until it looks like it is starting to turn golden brown. Allow it to cool.
Whisk together the eggs and lemon juice. Sift sugar, remaining flour, and baking powder. Add this to the egg mixture. Pour over the baked crust and return to the oven. Bake for an additional 25 minutes. Allow to cool and cut into squares.
Make 16 squares, which could be 2 per person (for the 8 servings) or you could just eat it out of the pan, like I do, and then it’s just one serving.
