These sweet and mildly tart lemon bars are a crowd pleaser whenever I make them, which is often because they’re soooo simple!
Preheat oven to 350F and grease a 9×13 pan.
Cut each stick of butter into 8 slices. Put the butter, 2 cups of flour and the powdered sugar into the food processor. Pulse until mixture is the consistency of corn meal.
Press the mixture into the bottom of the greased pan and cook for 15-20 minutes. Crust should be golden brown. When the crust is done, remove from the oven but do not turn off the oven.
While the crust is baking mix the granulated sugar and eggs till well combined. Incorporate the lemon juice, then the salt and baking powder and finally the remaining 1/4 cup flour and the lemon zest of you choose *. The mixture will be runny, don’t worry, it is supposed to be that way.
Pour the lemon mixture over the crust and return the pan to the oven; cook for 30 – 35 minutes.
Let the pan cool completely before cutting into bars and topping with additional powdered sugar!
* Note #1: You can add lemon zest if you like, I have lots of people who don’t like it so I leave it out. I’ve found that 1/4 cup is plently but adjust to your taste.
Note #2: Serve on lacy, frilly napkins to really impress people!

Hey! I just wanted to let you know I made this recipe today….on impulse because it looked so good I had to run over to my neighbours and borrow icing sugar…. Anyhow I made them (skipped the lemon zest) and they were AMAZING!! I cannot thank you enough for this recipe! The only thing I would change is the crust was a little thick… other then that it was great
