This tasty dessert is so simple to make and great for those on a low-carb diet.
Put the gelatin into a large mixing bowl. Pour 1 cup of boiling water into the gelatin and mix well. Stir in the cream cheese and lemon juice using a whisk or electric mixer and mix until smooth. (You don’t want any lumps!)
Pour into an 8×8 glass baking dish and smooth the top. Chill in the fridge until set.
Enjoy with fresh fruit, a touch of jam or with just a spoon!
