I’m so picky about good lemon bars, and this recipe is by far the best I’ve ever tried. They are light and lemony and perfect in every way.
Heat oven to 350ºF. Spray a 9×13 pan with cooking spray.
For the crust: Add 2 cups flour, 1/2 cup powdered sugar, and butter into a mixing bowl. Cut the mixture together with a pastry cutter until well blended. Press into the prepared pan and cook for 25 minutes or until slightly golden brown.
While the crust is cooking, make the lemon layer. In a medium bowl, beat eggs and salt with a fork. Mix in the remaining flour, granulated sugar, lemon zest and juice. Pour over the hot crust and bake for another 25 minutes.
Cool completely and dust with the remaining 1/3 cup of powdered sugar using a sifter. Cut into bars and enjoy!
These can be made a day before serving.

These look sooo good! And not a lot of ingredients either which is great. The texture looks firm enough so they don’t break apart when holding them…I’ll be making these soon!
