Use this icing to create a sharp contrast with carrot cake or my Caribbean Red Papaya Spice Cake. See my TastyKitchen recipe box for the cake recipe. It’s a sweet-tart treat.
Combine all ingredients in a medium bowl. Beat until smooth and glossy.
Frost on a completely cooled cake. Chill frosted cake for 30 minutes in the freezer before slicing.
