Sweet coconut and lime. Need I say more?
Preheat oven to 350ºF.
In a mixing bowl, add sweetened coconut flakes, lime juice and zest, and mix to combine. Add confectioners sugar and mix again. Add sweetened coconut milk and mix to well incorporate.
Scoop the mixture and drop into wells of a greased (or nonstick) 24-count mini muffin tin. Bake until golden brown, about 12–14 minutes. Let them remain in the tin wells until completely cool.
Remove with a wooden spoon. Store in an airtight container.
