There is a broad spectrum of peanut butter icings, but this is my own version (and thus my favorite)! I love how it is smooth, creamy, and fairly subtle; it complements rich and chocolaty desserts like brownie cupcakes.
Add the melted butter, vanilla, and milk to the powdered sugar; stir well with a fork. Icing tends to thicken a bit on its own, so don’t be afraid if it looks pretty runny. I take two large spoonfuls of peanut butter (3-4 tablespoons) and quickly mix with a fork until very smooth. If it seems thin, simply stir for a minute more. When just firm enough, spread over your dessert. Feel free to lay it on thick; it isn’t very rich, so the creaminess can do wonders for your treat.
