Easy to do and lovely dessert!
Allow eggs to sit at room temperature for 30 minutes. Meanwhile, preheat oven to 350 degrees and grease a pie pan or another small pie-sized pan.
In a medium bowl, combine sugar and cream cheese and beat together. Add eggs, lemon juice, and lemon extract and mix. This will be liquidy. If you want it to be on the more tart side, add extra lemon extract.
Bake for 20-30 minutes until the center doesn’t move anymore.
Cool then serve or store in the fridge covered.
