Crushed cookies topped with a creamy lemon curd and mascarpone filling, it’s a lemon party for your taste buds!
Set aside individual serving dishes or glasses for the parfaits. (The number of parfaits you make will depend on the size of the dishes/glasses used. If you use smaller glasses, you’ll get about 6-8 mini parfaits.)
In the bowl of your mixer, beat together the mascarpone cheese and lemon curd until smooth and creamy, about 2-3 minutes.
Spoon 1-2 tablespoons of crushed cookies into each individual serving dish or glass.
Divide the lemon mascarpone filling evenly between the serving glasses, topping each layer of cookie crumbs with about 1 cup of the filling.
Top the lemon mascarpone layer with a dollop of creme fraiche, and garnish with a cookie, if using.
Refrigerate at least 1 hour before serving, and enjoy!
