Something sweet and tangy to treat yourself to on a hot summer day—or any day!
Preheat oven 350ºF. Grease a 9×13 pan and line with foil, leaving an extra 2 inches on both ends. Grease the foil.
For the crust:
In a food processor, pulse the butter, sugars and salt until combined. Press the mixture equally into the greased pan and bake until edges turn golden brown, about 25 minutes. While the crust is baking prepare the filling.
For the filling:
Whisk together the eggs and egg yolks. Add the sugar and flour and whisk until smooth. Add the zest and juice and whisk until combined. Pour filling into the still warm crust mixture, lower oven to 300ºF and bake for 30-35 minutes until filling is set.
Refrigerate the bars for 2 hours. Sprinkle with powdered sugar and some zest if desired. Pull on the edges of the tinfoil to remove it from the pan. Enjoy!
