Simple lemon icing for cupcakes, or any other cake or dessert.
Melt the butter, then mix it with the lemon juice in a medium bowl. Add the sugar on top, mix well. You can control the consistency by adding more lemon juice or sugar. After reaching the desired consistency, let it sit for 5-10 minutes before using it, giving it a little mix just before icing your desserts. Use it to frost cupcakes by gently dipping the cupcake in the icing and then letting them set. You can also use this as a drizzle on top of a Bundt cake.
