Description

Lemon Bars, so spring-like!

Ingredients

  • FOR THE BOTTOM LAYER:
  • 1-½ cup Flour
  • ½ cups Butter
  • ¼ cups Sugar
  • FOR THE SECOND LAYER:
  • 1 cup Sugar
  • 2 whole Eggs
  • 1 cup Coconut
  • 3 Tablespoons Lemon Juice
  • 2 Tablespoons Flour
  • ½ teaspoons Baking Powder
  • ¼ teaspoons Salt
  • FOR THE LEMON ICING:
  • ¼ cups Butter
  • 1-½ cup Icing Sugar
  • 2 Tablespoons Lemon Juice

Preparation

Preheat oven to 350ºF. Grease an 8″ x 8″ pan and line with parchment, letting the edges hang over so you can easily remove the bars after they are baked. Mix together the bottom layer ingredients, cutting in the butter until crumbly, and press into prepared pan. Bake for 15 minutes.

Mix together the second layer ingredients with a wooden spoon: First mix the sugar with the eggs and then add the coconut and lemon juice. Whisk together the dry ingredients and then add them to the coconut mixture. Place on top of the first baked layer. Bake for 30 minutes or until golden brown. Let cool completely.

For the lemon icing, with a handheld beater, mix butter and icing sugar together and add lemon juice. I like the icing to have a fresh lemon flavour but be careful not to make it too runny. Ice the bars still in the pan and refrigerate at least 1 hour. Score the outside of the bars to remove them from the pan and, using the overhanging parchment, gently lift them out. Cut into squares and serve. Oh la lemony!

I made these at the request of a co-worker and she wound up sharing them with our entire group and everyone raved about them. Super simple to make (I used real lemons for the lemon juice) and they smelled delicious. Personally I didn’t try them but 8 co-workers can’t be wrong right?

These are fantastic! I added fresh lemon zest to the frosting (for the bright yellow zing). The bars were easy to make and the directions were simple and easy to follow. Thank you! I have a new favorite lemon bar. :0
