Description

Yummy homemade lemon bars! Better than the box one, that’s for sure!

Ingredients

  • FOR THE CRUST:
  • 1 cup Butter, Softened To Room Temperature
  • ½ cups Powdered Sugar
  • 2 cups All-purpose Flour
  • FOR THE FILLING:
  • 5 whole Eggs
  • 1-¾ cup Granulated Sugar
  • ¾ cups Fresh Lemon Juice
  • Zest Of 2 Lemons
  • ½ cups All-purpose Flour
  • Powdered Sugar, For Dusting

Preparation

Preheat oven to 350 degrees F. Grease a 9 x 13 baking dish.

Crust:

With an electric mixer, cream butter and sugar together. Add flour to the mixture, just until it comes together as a dough. Turn out onto a floured board and knead a few times. Press into bottom and slightly up the sides of the prepared pan. Bake for 15 to 20 minutes until golden brown. Let crust cool on a wire rack.

Filling:

Beat eggs, sugar, lemon juice and lemon zest together. Whisk in flour until smooth. Pour into crust. Bake for 30 minutes or until filling is set.

Cool to room temperature. Dust with powdered sugar before serving.

Made these, and loved them. My new go-to recipe.

The shortbread crust takes a bit of work to get it to come together into a dough, but its worth the time

I misplaced my go-to lemon bar recipe and I was looking for an alternative, so that’s how I came across this one. I love this recipe just as much as I loved my old one! My shortbread crust came out slightly crumbly but I thought it was perfect that way.

These lemon bars have more lemon juice than the regular recipe which makes them fantastic! I made these for a gathering of friends and it was the perfect crowd pleaser.
