Yummy homemade lemon bars! Better than the box one, that’s for sure!
Preheat oven to 350 degrees F. Grease a 9 x 13 baking dish.
Crust:
With an electric mixer, cream butter and sugar together. Add flour to the mixture, just until it comes together as a dough. Turn out onto a floured board and knead a few times. Press into bottom and slightly up the sides of the prepared pan. Bake for 15 to 20 minutes until golden brown. Let crust cool on a wire rack.
Filling:
Beat eggs, sugar, lemon juice and lemon zest together. Whisk in flour until smooth. Pour into crust. Bake for 30 minutes or until filling is set.
Cool to room temperature. Dust with powdered sugar before serving.

Made these, and loved them. My new go-to recipe.
The shortbread crust takes a bit of work to get it to come together into a dough, but its worth the time
