Description

Chewy and gooey, chocolate chip cookie meets pecan pie with a touch of coconut. ♥ Made 2 of these for Thanksgiving and they were gone within the hour.

Ingredients

  • 2 whole Eggs
  • ½ cups Sugar
  • ½ cups Brown Sugar
  • ½ cups Karo Syrup
  • 1 stick Butter, Melted
  • 1 teaspoon Vanilla
  • ½ teaspoons Salt
  • 1 cup Semi-Sweet Chocolate Chips
  • 1 cup Raw Pecans, Chopped
  • ½ cups Shredded Coconut (I Like Bob's Red Mill)
  • 1 whole Unbaked Pie Shell

Preparation

Beat eggs together, then sugars. Next Karo syrup, butter, vanilla, and salt. Fold in chocolate chips, chopped pecans and coconut. Pour into prepared pie crust and bake at 350 degrees for 45-50 minutes and be sure to watch the rim of the pie and maybe cover it after 30 minutes. Remove and let cool for at least 4 hours. Serve warm with ice cream or whipped cream.

Me too, that is exactly why I HAD to make it!

Our family owned restaurant served this pie and it was most popular. When we closed, I couldn’t handle NOT having it, so I went on the hunt to find the recipe. After a few changes and a few pies later…WALLA!
Problem is I have now developed Hypoglycemia and can not have SUGAR! Oh, the misery. No sugar?!?

I worked at a restaurant in college that served this pie. It’s my absolute favorite! I’ve been looking everywhere for this recipe. It’s amazing topped with a scoop of vanilla ice cream and drizzled with chocolate syrup.
