These bite-sized brownies combine dark chocolate with all the flavors of your favorite St. Patrick’s day beverage! They are based off a box mix and topped with an easy glaze. Perfect to enjoy year round with a glass of milk, cup of coffee, or even a Guinness!
For the Brownie Bites:
1. Preheat your oven to 325 degrees F and spray a mini-muffin tin with non-stick spray.
2. Prepare the brownie mix according to the box instructions (combining the mix, the oil and the eggs) and just make sure to substitute Guinness for the water that the recipe calls for. You can use up to 1/2 cup of beer in a mix that calls for 1/4 cup water, depending on you desired brownie texture.
3. Add in chocolate chips, if they are not included in your mix and if you would like them in your brownies.
4. Spoon batter into pan and bake for 15 minutes.
5. Let cool in pan for a few minutes, then transfer to a cooling rack.
6. Spoon a small amount of Guinness over each brownie for an extra kick (optional).
For the Glaze:
1. Place the powdered sugar in a medium bowl.
2. Whisk in the Bailey’s, Jameson, and water until the mixture becomes liquid. (You can also leave out the whiskey from the glaze and instead use 2 tablespoons of Bailey’s.)
3. If needed, add water or sugar until you get the right consistency.
4. Add green food coloring, if desired.
Drizzle glaze over brownie bites on cooling rack placed over a baking sheet. Let dry and enjoy!

Why in the world would you name this recipe something so insensitive as “car bomb”?

Super delicious! Very rich. I made half the recipe with Fudge brownie mix instead of dark chocolate and it was really good! They were in seconds at our St. Patty’s day party. thank you!
