After making homemade ice cream, I am always astounded at just how quick and easy it really is to make. This sweet treat calls for just a few ingredients and is quite rich and creamy. The great thing about this recipe is that you probably already have most, if not all, the ingredients you need.
Whisk the eggs in a mixing bowl until light and fluffy, approximately 1-2 minutes. Whisk in sugar, just a little at a time, until all the sugar is added.
Once all sugar is added, whisk for about 1 minute longer. Add the cream, milk and vanilla and stir to blend. Be careful not to whisk at this time, as that will create bubbles and the resulting ice cream will not be as rich and dense.
Transfer mixture to an ice cream maker. Follow your ice cream maker’s instructions. Freeze for at least 3-4 hours prior to serving.

Neat – I’ve never seen an ice cream recipe that called for whole eggs before. I just might have to give this one a try!
