The classic rum and mint cocktail recipe is transformed into a healthy, easy dessert. These lightly sweet coconut mojito popsicles are perfect for summer!
In a 4-cup measure or small pitcher, whisk the honey and lime juice until dissolved. Add the coconut milk, rum, and mint and whisk until combined. Add the sparkling water and stir once. Divide the mixture between 6 popsicle molds and set the sticks in place. Transfer to the freezer and chill overnight, or until solid.
