Description

I came across an old index card for this recipe written by my grandmother who passed away last year. We always had fun looking through recipes and cookbooks. This is a family favorite and as Grandma wrote on the bottom of the recipe, “Make sure you enjoy!”

Ingredients

  • 1-½ cup Brown Sugar
  • 4 Tablespoons Cornstarch
  • 3 Tablespoons All-purpose Flour
  • 1 cup Evaporated Milk
  • 1 cup Skim Milk
  • 3  Egg Yolks, Beaten
  • 2 Tablespoons Butter
  • 1 teaspoon Vanilla
  • 1 whole 9-inch Pie Crust, Baked

Preparation

In a double boiler, whisk together the brown sugar, flour, and cornstarch. Add just enough milk to make a paste. Mix in beaten egg yolks. Stir in the remainder of the milk. Cook slowly, stirring constantly. When the mixture is thick, remove from the heat. Add butter and vanilla.

Pour the filling into the baked pie crust. Refrigerate.

This pie turned out amazing! I used half light and half dark brown sugar and topped with freshly whipped cream. It made the perfect amount of filling for a regular depth frozen crust. Rave reviews from all who tried it, and those who didn’t were sad they didn’t get a slice! I will definitely use this recipe again.
