My grandmother’s famous cheesecake recipe. Light and airy with just the right balance of tart and sweet.
If making the crust, allow to cool completely. Alternately, make two 9″ crumb pie crusts.
Cream together cream cheese, sour cream, lemon juice, and vanilla. Gently fold in 2-3 cups of mini marshmallows. Spread on top of the cooled crust.
Top with canned fruit pie filling or cooled and thickened fruit. Allow to stand overnight, in the refrigerator, for best flavour.
