Neither English nor toffee, Gram’s Christmas cookies are a heavenly layered bar with a brown sugary bottom and chocolate-nut topping.
Mix together the shortening, margarine, brown sugar, egg yolks, flour, and vanilla extract. Spread out smooth over an 11″x15.5″ cookie sheet/jelly roll pan. Bake at 375ºF for 10 to 15 minutes; make sure the layer is not too brown, but a nice golden color. Place the candy bars and nuts on top as soon as the bottom layer comes out of the oven. As the chocolate melts, spread the chocolate evenly. Cut into squares when completely cool.
Notes: Gram (my great-grandmother) always used walnuts for the nuts, but other permutations of the recipe have included candied pecans. I personally use bittersweet chocolate for the top layer, but Hershey bars were the original recipe.
