Description

Not just another peanut butter bar recipe. This one is special.

Ingredients

  • ¼ cups Nonfat Greek Vanilla Yogurt
  • 1 whole Banana, Mashed
  • 1 cup Organic Chunky Peanut Butter
  • 1 cup Brown Sugar, Packed
  • ¼ cups Sugar
  • 1 Tablespoon Molasses
  • 4 whole Eggs
  • 1 Tablespoon Vanilla
  • 2 cups White Whole Wheat Flour
  • 1 cup Rolled Oats
  • 1-½ teaspoon Baking Powder
  • ½ teaspoons Cinnamon
  • ¼ teaspoons Sea Salt
  • 1-½ cup Dark Chocolate Chips
  • ½ cups Chopped Peanuts

Preparation

Preheat oven to 350ºF and grease a 9×13 baking dish.

1. In the bowl of an electric mixer, cream yogurt, banana, and peanut butter together until fluffy.
2. Add sugars and mix until combined.
3. Add the molasses, eggs and vanilla. Mix until incorporated on low speed.
4. Keeping the mixer on low speed, add the flour, oats, baking power, cinnamon, salt, chocolate chips, and peanuts slowly. Mix until everything is combined.
5. Pour the batter in your prepared dish.
6. Bake for 26-28 minutes or until the edges are golden brown and a toothpick inserted comes out clean. They may look a little under cooked in the center, but they will set up. Let cool for about 5 minutes before cutting into them.
