These brownies are slightly crispy outside, soft and cake-like inside. Best served warm with a dollop of stiffly whipped cream.
Sift together the cake flour, baking powder and salt. Set aside.
In a separate bowl, cream together oil and sugar. Add eggs and beat thoroughly. Melt chocolate in a double boiler and add to the oil mixture. Add vanilla. Add sifted ingredients. Beat just until combined. Do not overmix.
Pour into a 9×12 pan.
Bake in a preheated oven at 350 degrees for 20-25 minutes.
We like these extra gooey in the middle, so I bake them for about 20 minutes. If you’d like them to be a bit more cake-like, bake longer or until a toothpick comes out clean in the center.
