Description

These sticky, gooey, cinnamony, and gingery frosted little marshmallow treats are so quick and easy for a fun dessert. One bite gives you a hint of fallen leaves and gingerbread lattes.

Ingredients

  • FOR THE TREATS:
  • ¼ cups Butter
  • 2 cups Mini Marshmallows
  • 1 Tablespoon Molasses
  • 4-½ cups Rice Krispie Cereal
  • ½ teaspoons Cinnamon
  • ½ teaspoons Nutmeg
  • ¼ teaspoons All Spice
  • FOR THE GLAZE:
  • ¾ cups Powdered Sugar
  • 1-½ Tablespoon Milk
  • 1 teaspoon Vanilla

Preparation

To make treats:
In a large saucepan, melt the butter over medium low heat. Once it’s melted, add in the marshmallows and melt the marshmallows over medium low heat. Then pour in molasses and stir until mixture melts and becomes smooth.

Meanwhile, add Rice Krispies and spices into a bowl and stir. Set aside.

Take the saucepan off the heat once the marshmallows have completely melted. Add in the Rice Krispies and stir to coat them with the marshmallow mixture.

Press the marshmallow treat mixture into a 9 by 13 inch baking pan that you’ve lined with parchment paper.

Let the mixture cool and firm up. It’s much easier to cut the marshmallow treats when the mixture is firm and not when it’s still really gooey.

Take a gingerbread man cutter and firmly press it into the marshmallow treat mixture. Continue cutting all of the gingerbread men, putting the excess pieces of the Rice Krispie mixture back together, until all the mixture has been used up. Set them aside while you make the glaze.

To make the glaze:
Put the powdered sugar in a bowl. Add in the milk and mix it up really well with a fork. Add in the vanilla and mix to combine.

To decorate:
Using a wooden spoon, drizzle the glaze across each gingerbread man. Or, cut off the tip of a plastic bag and pour in the glaze. Drizzle over the gingerbread men marshmallow treats.
