This cake is spicy, really rich, dense and moist.
Preheat the oven to 150°C.
Lightly grease a 9″ round pan and line the base with parchment paper.
Sift together plain flour, baking powder and salt.
Beat butter, caster sugar and golden syrup until well mixed. Slowly mix in eggs, one by one. Add in ginger and cinnamon. Pour in half the flour mixture, mix until well combined. Add in all the ginger beer and mix well. Mix in the rest of the flour mixture. Lastly, mix in walnuts and raisin.
Pour cake batter into the greased baking tin and bake for about 1 hour 15 minutes to 1 hour 30 minutes or until a skewer comes out clean when inserted into the cake.

lilyk> 100g butter is just under 1/2 cup. about 0.4 cups if that make any sense.
260g flour is about 2 cups + 1 tbs flour.

strandjss>caster sugar is superfine sugar in the US. If you can’t find it, you can grind granulated sugar in a food processor or pestle and mortar.
A common brand for golden syrup is Lyles golden syrup. The colour is like honey but the consistency is like corn syrup. It has a very suble nutty taste to it. If you can’t find it, you can sub with honey or corn syrup.

Oh I definitely am going to bake this Friday. The only place I have found ginger beer is at the health food store – has anyone ever found this somewhere else?
Clarification on caster sugar and golden syrup….what are they?

Thanks for the info. Ive got a couple stores near me that may have it. I like that it’s spicier than ginger ale!
