Description

Sugar cookie crust, fresh fruit, and rum. Enough said.

Ingredients

  • 16 ounces, weight Pillsbury Sugar Cookie Log
  • 4 ounces, weight Cream Cheese, Softened
  • 2 Tablespoons Coconut Rum
  • 8 ounces, weight Cool Whip
  • 1 cup Sliced Strawberries
  • 2 whole Kiwis, Sliced
  • ¾ cups Blueberries
  • 1 whole Banana, Sliced
  • ⅓ cups Sugar
  • ⅓ cups Orange Juice
  • 2 Tablespoons Lemon Juice
  • ¼ teaspoons Salt
  • 1-½ teaspoon Cornstarch

Preparation

Preheat oven to 350 degrees (or whatever temperature the dough calls for).

Let the dough come to room temperature, and press it into a cookie sheet. Make sure it is thin. Bake for about 10 minutes, rotate pan, then bake for another 5 mintues. The baking time will all depend on how cold the dough was and your own oven, so watch carefully. Do not overbake!

One cookie has cooled, beat cream cheese, rum and Cool Whip with a hand mixer. Spread on the cookie crust. Top with strawberries, kiwis, and blueberries, leaving space for the bananas. I add them last so they don’t get brown. Refrigerate while you make the glaze.

For the glaze, combine sugar, orange juice, lemon juice, salt, and cornstarch in a small saucepan. Stir constantly until mixture thickens. Let cool for about 10 minutes. Add bananas to the pizza, then drizzle the glaze on top.

Refrigerate for at least 1 hour.

I made this last night because I thought it sounded good and I always like to try a recipe before serving it to friends or extended family. As luck would have it our neighbors came over for supper last night on a whim and I served this for dessert. I was nervous since I had to serve it without taste testing but it received rave reviews. Definitely something I will be making again soon. I loved the cream cheese layer as it wasn’t as sweet as most fruit pizzas are.

I made this yesterday for a Demarle party. Everyone loved it! I skipped the bananas and added blackberries. The glaze is what really made it gorgeous. Just don’t let it sit too long or it will get soggy. I will definitely make this again and again!

Made this for a bridal shower and it was a TOTAL hit! I did leave off the glaze and I think it was a good choice!

I make this without the glaze. The glaze sounds good. This is one of our families favorite recipes!!! Yum, now I want some.

This was delicious! I encountered a slight problem in that the juice from the fruit collected on the edges of the pizza and made the edges soggy….but still SUPER tasty!

This was excellent – I just made it last night! I did not make the glaze (because I was running out of time), left off the bananas, and added mandarin oranges. Delicious! The only thing I will do differently in the future is spray the cookie sheet. I had the hardest time getting the slices out without crumbling them.

My local store didn’t have any pre made sugar cookie dough so I had to whip up a batch (from Dorie Greenspans Baking: From my Home to Yours). This was a HUGE hit at a get together on the weekend. I will definetly be making again – probably this weekekend to celebrate Canada Day!!
