Description

Fresh fruit on a shortbread crust glazed with a delicious fruit juice reduction. This is awesome!

Ingredients

  • FOR THE CRUST:
  • 1-½ cup Flour
  • ½ cups Powered Sugar
  • 1 pinch Salt
  • ¾ cups Butter
  • 1 teaspoon Vanilla
  • FOR THE CREAM CHEESE MIXTURE:
  • 8 ounces, weight Cream Cheese, Room Temperature
  • ¼ cups Powdered Sugar
  • 1 teaspoon Vanilla
  • FOR THE FRUIT TOPPING:
  • 20 ounces, weight Canned Pineapple Chunks, Drain And Reserve Juice
  • 11 ounces, weight Canned Mandarin Oranges, Drain And Reserve Juice
  • 2 pints Strawberries, Washed, Hulled And Cut In Half
  • 2 pints Blackberries, Washed And Dried Well
  • 1  Kiwi, Peeled And Sliced
  • FOR THE GLAZE:
  • 1 cup Reserved Fruit Juice
  • ⅔ cups Sugar
  • 2-½ Tablespoons Cornstarch
  • 1 teaspoon Lemon Juice

Preparation

Heat oven to 350 F.

In a medium sized bowl mix flour, sugar and salt. Cut in butter and vanilla using a pastry cutter or two knives. Press onto a round pizza sheet or stone (medium to large size pizza pan). Bake 12-15 minutes (cooking time of the crust is approximate so check it as it cooks) or until light brown. Remove from oven, set pan on a rack and allow crust to cool.

In a medium sized bowl beat together cream cheese, sugar and vanilla. Spread over the cooled crust. Arrange fruit of your choice on top.

Stir together glaze ingredients in a small saucepan over medium heat. Bring to a boil and cook until thick. Remove pan from heat and allow it to cool, then pour over the pizza. I used a sauce brush to help spread it on the fruit.

Refrigerate until ready to serve.
